My First Food Session with Jamie Wolff

I had the pleasure of working with a very talented chef, Jamie Wolff. Here is a quick and easy recipe for corn salsa...simply delicious!

Ingredents:
3 cups corn, cooked, shucked and cooled
1/2 cups roasted red peppers, small dice
1 medium white onion, small dice
4 cloves garlic, fine dice
4-5 Thai chili's, fine dice 
1 small bunch cilantro, chopped
1/4 cup white vinegar
3 tablespoons sugar
Salt and pepper

Mix all the produce together in a large bowl.  In a separate bowl  whisk together vinegar, sugar and salt and pepper.  Pour over the corn mixture, toss and chill. 

This salsa is delicious served with just tortilla chips or try it in one of these warm applications:
Grilled into chicken and cheese quesadillas  
Stirred into couscous
Topper for tacos or enchiladas
Topper for leafy green salads (great with grilled chicken or fish)

Hanna + Jacquelyn = BFFs

My 9 year old daughter Hanna has had one friend who I constantly hear stories about - who makes her giggle, who have inside jokes, who play jokes on each other and classmates -- who are going to be friends for life, Hanna + Jacquelyn. They have been friends since kindergarten at Blessed Sacrament in Lincoln, NE. We got sad news that Jacquelyn will be moving to Portland, OR with her wonderful family. We will miss you so much but look forward to seeing you and your family on your holiday visits home! XOXO -- from Hanna and family

Niederklein Family | September 2011

What an adorable family the Niederklein's are! Derrick, Kristi, and sweet little Berkley, oh and don't forget Josie! I met Kristi through bootcamp and immediately thought she was one of the nicest people out there.When sickness fell upon me, I also found that she worked at the family medical practice that I have been going to for the past 5 years. They are all wonderful there at Family Medical of Lincoln. Seeing this family together made me smile as they are all so loving together. Thank you to the Niederklein family for allowing me to capture these wonderful moments for you!

Lincoln Air Show { Justus' Dream Come True }

My 2 1/2 year old son, Justus, has been obsessed with the normal boy obsessions: Cars, balls, games, and AIRPLANES. My goal has been to expose him to the aviation world. He has been to the Air & Space Museum, Silverhawk Aviation (when they had the Doolittle Raiders), and now, he has experienced the ultimate Lincoln Air Show. We did miss the main event, The Blue Angels, but saw them practicing the last two days. {Pretty amazing}
